At its core, a fusion of flavors extracted from my culinary trips around Latin America. When creating a new dish, there are many ways I find inspiration: patterns that repeat indefinitely such as fresh raw material, the surroundings of the kitchen I’m working from and who I am cooking for. And sometimes it just comes straight from the heart, depending on the mood of that moment. Feeling happy, or sad, everything matters when I find myself in front of a burning fire.
